Victoria’s best artisan bakers ( like Byron Fry of Fry’s Red Wheat Bakery, pictured here with his hand-rolled pretzels),  also mill their own flours and use none of the additives found in the kind of flour produced in Canada’s large industrial flour mills. This story delves into the new generation of “grain geeks” who are looking for truly whole grain flours for their craft-made breads, pasta and pastries.
